CREPE SUZETTES 
3 eggs
1 c. milk
1/3 c. club soda
1/3 c. orange juice
1 1/4 c. flour
2 tbsp. sugar
1/2 tsp. salt
1 tsp. vanilla extract
2 tbsp. butter

UTENSILS:

Mixing bowl
Wire whisk
8 or 9 inch skillet
Small ladle

Beat the eggs lightly in the mixing bowl using the wire whisk. Add the milk, club soda and orange juice a little at a time. Beat in the flour, sugar, salt and vanilla extract for form a smooth batter.

Heat a teaspoon of the butter in the skillet. Use the ladle to add enough batter to coat the bottom of the skillet in a thin, even layer. Cook for 2 minutes on the first side and 1 1/2 minutes on the second side, or until the pancake is lightly browned. Remove and keep warm while cooking the rest of the pancakes.

Spread a thin amount of grape jelly on each pancake and roll up. You may sprinkle powdered sugar on the top of the rolled pancake. I could never make them fast enough for our family.
