CHICKEN PILAU 
3 or 4 lbs. chicken
4 tbsp. butter
1 tbsp. sugar
2 lg. tomatoes
1 clove garlic, minced
Vinegar to taste
1 tbsp. salt
1 tsp. curry powder
Red pepper to taste
4 c. rice
7 to 8 c. water

Cut chicken in serving pieces and brown in butter and sugar. Add 1 cup boiling water, tomato, onion, garlic, vinegar and seasonings. Simmer, covered, until meat is tender, adding water as necessary to prevent burning. Add rice, 7 to 8 cups boiling water and simmer tightly covered, until rice is tender and water is absorbed.
