CORN BEEF CASSEROLE 
1 can corn beef
2 c. instant potatoes
1 stick butter
1 sm. onion, chopped
1 lg. or 2 sm. cloves garlic
2 c. Cheddar or Swiss cheese
Season to taste with salt and black pepper

Brown corn beef, garlic and onions in 1/2 stick butter. Mix instant potatoes up as directed (they should be a little thick). Spray square baking dish with Pam. Layer potatoes first, then meat, then cheese. Keep doing this until baking dish is filled. Bake at 450 degrees until cheese is melted good and it browns on top. This is quick and easy and very filling. Ideal for a quick meal. Serve with salad or green beans.
