STUFFED PEPPERS 
4 med. green peppers
1 pkg. (7 oz.) Stove Top chicken stuffing mix
1/2 lb. sausage
1 can (8 oz.) whole kernel corn, drained
1 c. grated cheddar cheese

Half peppers lengthwise; discard stem and seeds. Parboil peppers in boiling salted water 8 to 10 minutes. Drain and place in shallow baking dish with 1/8 inch of water. Prepare stuffing as directed on package. Saute sausage until brown; pour off fat. Add sausage and corn to stuffing. Spoon into green pepper halves. Bake at 400 degrees for 30 minutes.

Top with cheese and bake 10 minutes longer or until cheese is melted. Makes 4 cups stuffing mixture or 8 servings.
