MINT LIQUEUR 
4 c. sugar
2 c. water
1 lemon, sliced thin
3 c. vodka
2 tsp. peppermint extract
1 tsp. vanilla
Green food coloring (optional)

Combine sugar, water and lemon in saucepan. Bring to a boil, stirring constantly. Lower heat. Simmer 5 minutes and strain. Cool thoroughly. Stir in vodka, peppermint, vanilla and a few drops food coloring if desired. Pour into clean glass container with tight fitting lid. Allow to mellow for 2 weeks. Use as Creme De Menthe. Makes 2 1/2 pints.
