TOMATO MINT SANDWICHES 
4 thin slices of bread
2 tbsp. soft butter
1 tomato
2 sprigs fresh mint
Dash salt and pepper
1/8 tsp. sugar

Trim crust from bread. Spread butter on generously. Thinly slice tomato. Place 2 slices of tomato on 2 of the slices of bread. Sprinkle tomato with seasonings. Wash and thoroughly dry mint sprigs. Snip into tiny pieces and sprinkle on tomato. Cover with remaining bread slices. Cut each sandwich into 4 triangular pieces. Garnish with sprigs of mint. Serve immediately. Makes 8 pieces.
