WINTER VEGETABLE SOUP 
3 onions, chopped
2 tbsp. butter
1 lb. ground beef
1 tsp. minced garlic
3 c. beef stock
2 (28 oz.) cans tomatoes
1 c. celery, sliced
1 c. carrots, sliced
1 c. potatoes, diced
1 c. red wine
2 tbsp. chopped parsley
1/2 tsp. basil
1/4 tsp. thyme
Salt & pepper to taste

In soup kettle cook onions in butter until tender. Stir in ground beef and garlic, cook mixture until brown. Add beef stock and remaining ingredients. Bring to boil; reduce heat and simmer for 1 to 1 1/4 hours.
