RHUBARB MUFFINS | |
1 1/4 c. brown sugar 1/2 c. oil 1 egg 2 tsp. vanilla 1 c. buttermilk 1 1/2 c. diced rhubarb 1/2 c. walnuts 2 1/2 c. flour 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 1 tbsp. melted butter 1/3 c. sugar 1 tsp. ground cinnamon Mix all ingredients and fill greased or paper lined baking tins 3/4 full. Sprinkle tops with sugar. Bake for 20 to 25 minutes at 400 degrees. |
