SCOTTISH SHORT BREAD 
4 c. flour
1 c. sugar
1 lb. butter, softened

OR:
2 1/2 c. flour
1/2 c. sugar
1 c. butter

Gradually add sugar to softened butter, cutting it in with a knife. Add flour slowly, then mix with hands working until bowl is clean and dough is shaped like a ball. Turn into a baking pan and pat down flat. With fork press around the edges and prick on top. Bake 325 degrees for about 45 minutes or until golden. Cut while warm into small pieces.
