CANDIED GRAPEFRUIT 
1 lg. grapefruit
1 1/2 c. sugar
3/4 c. water
1/4 tsp. salt
1 (3 oz.) Jello, any flavor

Cut, peel in strips and remove part of the membrane. Cover peel with cold water and boil 20 minutes. Repeat 2 more times. Drain. Combine sugar, water and salt. Stir over medium heat to dissolve sugar. Add peel and bring to boil. Simmer 20 minutes. Add Jello - stirring to dissolve. Remove peel and drain on rack. Let stand 20 minutes. Roll strips in sugar. Let dry on rack overnight. Store covered.
