EASY SPANISH RICE 
1/2 bell pepper
1 c. rice
1 sm. onion
3 c. water
1 can tomatoes

Bring rice to a boil in 3 cups water, then cook slowly about 15 minutes. Drain off excess water. Cut green pepper and onion into small pieces. Fry in a small portion of fat until done. Mix rice and green pepper-onion mixture. Add tomatoes and mix well. Salt and pepper to taste. Simmer slowly about 15 minutes.
