POULTRY DRESSING 
Toast 8 slices white bread and allow to cool; break into pieces, soak in 1 cup milk. Add additional milk if necessary to make it quite moist.

Grind giblets; brown in butter; add ground up onion; brown together. Season to taste with salt and pepper. Mix giblets into the toast and milk mixture. Add 1/2 teaspoon poultry seasoning and 1/2 teaspoon sage to mixture.

Stuff chicken/turkey with dressing. Place leftover dressing into turkey neck or put into casserole. Salt outside of chicken/turkey. Put small amount of water into roaster.
