KENTUCKY POUND CAKE 
1 3/4 c. oil
2 1/2 c. self-rising flour
2 c. sugar
2 1/2 tsp. cinnamon
1 tbsp. vanilla extract
2 c. chopped nuts
1 med. can crushed pineapple
4 eggs, separated

Combine all ingredients, except egg whites in bowl; mix well. Fold in stiffly beaten egg whites. Pour into greased and floured tube pan. Place in cold oven. Bake at 325 degrees for 1 hour and 20 minutes.
