ZUCCHINI BARS 
1 c. sugar
2 eggs
1 c. flour
1 tsp. baking powder
1 tsp. cinnamon
1 c. zucchini
1 tsp. vanilla
3/4 c. salad oil
1 tsp. baking soda
1/2 tsp. salt
2 tsp. cocoa (optional)

Cream together sugar, eggs and oil. Add flour, soda, baking powder, cinnamon, vanilla, salt and zucchini. I add about 2 teaspoons of cocoa to mine also. Beat well. Bake in 9"x13" cake pan at 365 degrees for 30 to 40 minutes.

FROSTING:

3 oz. softened cream cheese
1 3/4 c. powdered sugar
1 tsp. almond extract (optional)
2 tsp. cocoa (optional)
6 tbsp. butter
1 tsp. vanilla

Beat until smooth and frost bars when cool. Very good. One cup ground raw carrots or pumpkin can be used in place of zucchini.
