"BLINTZ SOUFFLE" 
2 pkgs. frozen cheese blintzes (you may also use any of the fruit varieties)
butter, melted
1 1/2 c. sour cream
1/4 c. sugar
Dash of cinnamon
4 eggs, beaten

Melt just enough butter to coat a 13 x 9 inch baking pan. Place blintzes in the greased pan, line them side by side. Mix sour cream, eggs, sugar, dash of cinnamon. Pour mixture over the blintzes. Bake at 350 degrees for 30 to 35 minutes until mixture puffs up and is slightly browned. Check for doneness by inserting knife in egg mixture. It should come out clean. Serve warm. Excellent for brunches.
