PUMPKIN ROLL 
CAKE:

1 tsp. baking soda
3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. cinnamon
3/4 c. flour

FILLING:

1 tsp. vanilla
8 oz. cream cheese
4 tbsp. soft butter
1 c. powdered sugar

Grease 17x10 1/2 inch pan (jelly roll pan); put wax paper on top and grease paper. Cream eggs and sugar; add pumpkin, cinnamon, flour and baking soda. Mix together with creamed mixture and pour onto cookie sheet. Bake 10-15 minutes at 375 degrees.

Put tea towel on table. Sprinkle with powdered sugar. As soon as cake is finished, put on towel, take wax paper off. Put powdered sugar on ends of roll. Roll in towel like jelly roll until cold (rolled up - about 1 hour). Unroll and put in filling. Roll again. Refrigerate for 2 hours.
