LOUISIANA DIRTY RICE 
1 pkg. raw rice
1 red onion, finely chopped
1/8 c. oil
1 sm. container of fresh chicken livers
Salt to taste
2 cloves garlic, peeled and chopped
1 bunch green onion, finely chopped
Red pepper, to taste (optional)
1/4 bunch fresh parsley
2 1/2 c. water

Cook as directed on package, check for doneness, may need more water until cooked tender. Set aside. Cut up red onions and brown in oil. Cut up livers and add to onions and cook until brown. Add garlic and green onions along with the parsley, salt, pepper and water. Pour over cooked rice. When the water is absorbed, put in a large baking dish and dot with butter and brown in 350 degree oven for 15 minutes. Serves 8 to 10 people.
