MEXICAN CASSEROLE 
2 lbs. ground beef
1/2 green pepper, chopped
1 bag Doritos (set aside)
1 c. shredded Cheddar cheese
1 can mushroom soup
1 can cream of chicken soup
1 can mild enchilada sauce
1/4 c. water

Brown together ground beef and green pepper in pan. In separate saucepan, simmer on low the soups, enchilada sauce, and water. Add beef mixture and sauces together.

In large 9x12x2 inch casserole dish, layer as follows. Add thin layer of Doritos on bottom, half of beef mixture, half of Cheddar cheese, alternately with Doritos. Decorate top of casserole by standing the Doritos on end into the mixture. Bake at 375 degrees until heated through and bubbling, about 30 minutes. Serve with more Doritos and salad.

OPTIONAL: You can also add a scant layer of cooked rice (1/2 cup cooked), if you desired.
