FRENCH COCONUT PIE 
1 1/3 c. coconut
3 eggs
1/4 c. buttermilk
1 1/4 c. sugar
1 tsp. vanilla
3/4 stick butter

Mix all ingredients and pour into unbaked pie shell. Bake at 375 degrees for 10 minutes. Then at 300 degrees until golden brown.
