RITZ CARLTON BLUEBERRY MUFFINS 
3 1/2 c. sifted all-purpose flour
2 tbsp. baking powder
3/4 c. sugar
Pinch salt
5 eggs, beaten slightly
1/2 c. milk
5 oz. unsalted butter, melted & cooled
4-5 c. blueberries, fresh or frozen (I found this amount too much)
Additional sugar for topping

Heat oven to 425 degrees.

1. Mix all dry ingredients together.

2. Stir in eggs, milk and butter. Do not overmix!

3. Carefully stir in blueberries.

4. Grease the top and inside of large muffin tins.

5. Insert paper cups and spoon batter to top of paper cups.

6. Sprinkle generously with sugar.

Reduce heat to 400 degrees. Place muffin tin on middle shelf of oven. Bake 25 minutes until golden. Remove muffins to cool. 15-16 large muffins.
