CURRY BEEF 
2 lb. beef
4 tbsp. vegetable oil
1 clove garlic, chopped finely
1 slice hot pepper, chopped
2 sprigs chives, chopped
1-2 tbsp. curry powder
1 c. onions, chopped
2 c. coconut milk or 2 c. water with dash of ginger

Cut meat in 1 inch strips, or use cubed meat and cut in small pieces. Heat oil in pan. Add garlic, pepper, chive and curry powder. Cook 2 minutes. Add meat and brown. Add coconut milk or water substitute to cover meat and cook on low heat until meat is tender. Serve over rice.
