PUMPKIN COOKIES 
3 c. sugar
1 1/2 c. shortening
3 c. pumpkin
5 c. flour
3 tsp. baking powder
3 tsp. cinnamon
3 tsp. baking soda
3 tsp. vanilla
1 c. nuts, if desired

Use a large bowl. Makes about 15 dozen cookies. Bake at 375 degrees for 10-12 minutes. Drop by teaspoons onto greased cookie sheet. Serve plain or iced with a vanilla.

FROSTING:

1/4 c. Crisco
1/2 tsp. salt
2 tsp. vanilla
3 c. confectioners' sugar
1/3 c. milk
Food coloring (if desired)
