RICOTTA AND RICE PATTIES 
1 lb. raw rice
1/2 lb. Ricotta cheese
3 eggs
1/2 c. bread crumbs
1 tbsp. parsley
1/2 c. grated cheese
Salt and pepper to taste

Boil rice until cooked. Drain well. Mix in a bowl with all other ingredients. Shape into patties and dip into extra bread crumbs. Cook in hot oil until brown. Drain on paper towel.
