1 c. Bisquick
1/2 c. Parmesan cheese
1/2 c. oil
4 eggs
Salt and pepper to taste
4 med. zucchini, sliced
8 oz. Mozzarella cheese, cubed

Mix first 5 ingredients together. Add zucchini and Mozzarella. Pour into casserole dish. Bake at 350 degrees for 40 minutes or until lightly browned.
