GRANDMA'S RATATOUILLE | |
1 med. zucchini, sliced 1/2 red or green pepper, sliced 1/2 onion, sliced 1 sm. handful of string beans, chopped 1/8 tsp. oregano 1/8 tsp. garlic powder 1/8 tsp. basil 1 3/4 c. tomato sauce Grated Parmesan or Romano cheese for garnish Pour all the ingredients into a small heavy saucepan. Cook over medium heat for about 30 minutes or until everything is tender. Stir occasionally to prevent scorching. To serve, sprinkle on some Romano or Parmesan cheese and pour over brown rice. Serves 1 or 2 as an entree. |
