SAUCY STEAK & PEPPERS | |
3 tbsp. salad oil 1 beef round steak, about 2 lbs. 1 tbsp. flour 2 celery stalks, thinly sliced 1 med. onion, thinly sliced 1 c. water 1/2 tsp. salt 1/8 tsp. ground red pepper 2 med. green peppers, cut into bite size pieces In skillet over medium heat, in hot salad oil, cook round steak until well browned on both sides. Remove steak to 12"x8" baking dish. Into hot drippings in skillet, stir flour; cook, stirring constantly until flour is dark brown. Add celery and onion; cook over medium heat until vegetables are tender, stirring occasionally. Stir in water, salt and red pepper over high heat to boiling. Pour sauce over steak in baking dish. Cover and bake at 350 degrees for 1 1/4 hours. Remove foil, add green peppers and bake, uncovered 15 minutes or until fork tender. Baste with sauce. |
