GRAHAM CRACKER COOKIES 
Whole cinnamon graham crackers (approximately 1/2 box)
1 3/4 sticks butter
1/2 c. sugar
1 1/2 c. chopped pecans
1 tsp. coconut flavoring

Place crackers in bottom of foil-lined cookie sheet. Boil butter and sugar together for 3 minutes, stirring constantly. Add pecans and flavoring. Pour over crackers. Bake at 350 degrees for 7 minutes. Cool and break.

For an extra treat, as soon as you remove the cookies from the oven, sprinkle milk chocolate morsels over them and let set until morsels soften - doesn't take long - then swirl chocolate, spreading to cover the top of cookies completely. Let cool and break. By adding the chocolate, it makes it taste like an entirely different cookie.
