ZUCCHINI BREAD | |
3 eggs 1 c. vegetable oil 3 tsp. vanilla 1 tsp. salt 1 tsp. baking powder 1 c. walnuts, chopped 2 c. sugar 2 c. grated raw zucchini 3 c. flour 1 tsp. baking soda 3 tsp. cinnamon Beat eggs until light and fluffy. Add sugar, oil and zucchini and mix lightly. Sift flour, salt, cinnamon, soda, and baking powder together. Add to zucchini mixture and stir well. Add nuts. Pour into 2 buttered and floured 9 x 5 x 3 inch pans. Bake at 350 degrees for 1 hour. |
