HOT CHEESE BALLS 
1 1/2 c. sharp cheddar cheese, grated
1 tbsp. flour
1/4 tsp. salt
2 egg whites, stiffly beaten
Dash of cayenne
3/4 c. fine cracker crumbs
Oil for frying

Mix cheese, flour, salt and cayenne. Add egg whites. Shape into balls and roll in crumbs. Place 2" of oil in a 1 quart saucepan. Heat and fry balls until brown. Drain and serve immediately on toothpicks. Yield: 20 to 24.
