BERRY SAUCE 
1 pt. strawberries, raspberries, blackberries, or other fresh berries
1/4 c. unsweetened apple juice
2 tbsp. unsweetened apple juice concentrate
1/4 tsp. vanilla extract

Rinse, drain and hull or clean berries. You should have a scant 2 cups, cleaned. Puree berries along with remaining ingredients in a blender or food processor until smooth. If berries have seeds, strain after pureeing. Serve with cakes, poached fruits, and custards. Yield: 1 3/4 cups.
