MARK'S MACARONI 
1/2 lb. mozzarella cheese, shredded
2 lb. ricotta cheese
1/2 c. grated Muester cheese
2 eggs
2 tbsp. chopped parsley
Salt, pepper & nutmeg to taste
1 (12 oz.) box jumbo macaroni shells or manicotti
1 sm. jar chopped mushrooms
1 (15 oz.) jar spaghetti sauce or marinara sauce

Mix cheeses, eggs and parsley; season with salt, pepper and nutmeg to taste; mix well. Cook shells/manicotti according to directions on box (not too soft, though). Drain and rinse with cold water. Fill shells/manicotti with cheese mixture.

Arrange in 9 x 13 inch baking dish and cover with mushrooms and sauce. Bake 30 minutes at 350 degrees. (This recipe was given to me by the owner of a store where I worked during a summer missions project in New Jersey with Campus Crusade.)
