CLAM CAKES 
2 c. flour
1 tsp. salt
1/2 c. clam juice
1 c. minced clams
2 tsp. baking powder
2 eggs, beaten
1/2 c. whole milk

Combine eggs, juice and milk; set aside. Sift all dry ingredients. Add egg mixture to sifted dry ingredients; blend in clams. Fry in deep fat at 360-370 degrees until golden brown. Place in brown paper bag to remove excess fat. Serve.
