HOT MEATBALL LUNCH 
1/2 lb. ground beef
1/2 lb. ground veal
1/2 lb. ground pork
2 eggs
1/4 c. chopped onion
3 tbsp. chopped parsley
1 tsp. salt
1/4 tsp. paprika
1 clove garlic, minced
3 tbsp. Parmesan cheese, grated
1/2 tsp. dried oregano leaves
2 slices bread
2 tbsp. butter

QUICK TOMATO SAUCE:z:

1/2 c. chopped onion
1 clove garlic, minced
2 tbsp. olive oil
1 (28 oz.) can Italian plum tomatoes
1/2 (6 oz.) can tomato paste
1/2 tsp. salt
1/2 tsp. sugar
4 lg. Italian rolls
1 c. Mozzarella cheese, grated

Mix together meat, eggs, onions, parsley, salt, paprika, garlic, Parmesan cheese and oregano.

Soak bread in water. Wring the liquid from bread. Add to the meat mixture.

Form the meat mixture into 12 medium-large balls. Brown lightly in butter or bake at 400 degrees for 20 minutes. Place in large casserole.

For quick tomato sauce, saute onions and garlic in olive oil until soft and golden. Add tomatoes, tomato paste, salt and sugar.

Bring to a boil. Simmer gently 15 to 20 minutes. Pour sauce over meatballs in casserole. Cover. Bake at 350 degrees for 30 minutes. Divide meatballs and sauce among rolls. Sprinkle with cheese. Place on a baking sheet.

Bake at 350 degrees until cheese melts. Serve immediately. Preparation time: 35 minutes. Cooking time: 30 minutes. Baking time: 30 minutes.
