MEAT BALL CHOWDER | |
3/4 lb. ground beef 3/4 lb. ground pork 1 egg 2 tsp. dried mint leaves, crushed 1 1/2 tsp. salt 1/8 tsp. pepper 4 c. water 1 can or 1 env. onion soup mix 1 can (about 1 lb.) stewed tomatoes 1 can (about 1 lb.) red kidney beans 1/4 c. chopped parsley Mix ground beef and pork with egg, mint leaves, salt and pepper in a bowl; shape into tiny balls. Heat water to boiling in a kettle; stir in onion soup mix; cover. Simmer 10 minutes. Place meat balls in simmering soup; cover; simmer 15 minutes. Stir in tomatoes and beans and liquid; heat just to boiling; stir in parsley. Ladle into soup bowls; serve with chowder crackers, if you wish. |
