SWEET POTATO CASSEROLE 
3 c. cooked, mashed sweet potatoes
1/2 tsp. salt
1/3 stick butter
1 tsp. vanilla
2 lightly beaten eggs
1/2 c. milk

TOPPING:

1 c. brown sugar
1/2 c. self-rising flour
1/2 stick butter
1 c. chopped nuts (pecans)
1 c. coconut

Combine mashed sweet potatoes, salt, butter, vanilla, eggs and milk. Pour into 8x9x2 casserole dish.

Combine by hand: brown sugar, self-rising flour, butter, nuts and coconut. Spread over potato mixture. Bake at 350 degrees until topping is brown (30 minutes).
