SPINACH BALLS 
3 eggs
1 pkg. frozen chopped spinach, cooked & drained
1 c. Pepperidge seasoned stuffing (or 1 c. plain croutons plus 1/2 tsp. Italian seasoning)
1/2 c. Parmesan cheese
3/8 c. melted butter
1/2 c. chopped onion
Salt & pepper

Mix, make into balls (about 1 tablespoon each). On greased cookie sheet bake at 350 degrees for 20 minutes. Serve immediately.
