SPICY SAUSAGE BURRITOS | |
2 (16 oz.) cans refried beans 1 lb. bulk sausage 1 med. tomato, coarsely chopped 1 tbsp. chili powder 1 tbsp. vinegar 1 clove garlic, chopped fine 1/2 tsp. salt 1/4 tsp. cinnamon 8 (10 inch) flour tortillas 1 c. shredded Monterey Jack cheese Brown sausage. Stir in tomatoes, chili powder, vinegar, and remaining spices. Heat to boiling, then reduce heat. Simmer uncovered, stirring occasionally until thickened, approximately 10 minutes. Soften tortillas in microwave for 30 seconds. Spread 1/3 cup refried beans and 1/4 cup sausage mixture over each softened tortilla. Fold sides over and roll from bottom. Place seam side down in 9x13 inch pan and bake uncovered at 350 degrees for approximately 20 minutes. Yields: 8. |
