MARINATED CRACKED CRAB 
3 cracked crabs
1/2 c. oil
1/4 c. wine vinegar
1/3 c. finely chopped parsley
1 tbsp. minced onion
1 tsp. salt
1/2 tsp. black pepper
Garlic to taste

Put cracked crab in a large bowl. Combine all other ingredients in a small bowl and blend well. Pour this mixture over the crab and toss together until the marmalade is well absorbed. This can be served right away but is better refrigerated for a few hours or overnight.

The Marinated Crab can be served as an appetizer or a warm summer evening dinner.
