MARINATED VEGGIES 
2 pt. mixed veggies
1 med. onion, diced
1 pt. Italian dressing (about)

Put veggies in a covered microwaveable dish. Cook in microwave on high for about 4 minutes (veggies should still be a little crisp). Drain. Add onion and then pour Italian dressing over. Dressing should just cover the vegetables. Cover and chill overnight. Tastes better the longer it marinates.

Since microwave ovens vary in power, you may need to adjust your cooking time.
