BEEF, PORK MEATLOAF (MICROWAVE)
1 c. tomato juice
3/4 c. plus 2 tbsp. fine dry bread crumbs
1 tbsp. instant minced onion
1 tbsp. dried parsley
1 tsp. crumbled dried sage or poultry seasoning
1 tsp. salt (I use 1/2 tsp. salt)
1/4 tsp. black pepper
2 eggs
1 lb. lean ground beef
1 lb. lean pork meat

In large bowl mix tomato juice, 3/4 cup bread crumbs, onion, parsley, sage, salt, pepper, and eggs, slightly beaten; let stand 5 minutes. Add beef and pork and mix well. Shape in smooth, firm 12 inch loaf in greased 13 x 9 x 2 inch baking pan. Sprinkle with remaining 2 tablespoons bread crumbs. Bake in 350 degree oven for 1 hour or until done. Let stand 10 minutes. In microwave oven, cover with wax paper. Cook 20 minutes in 650 or 700 watt microwave. Let stand 5 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
