CHICKEN CASHEW 
3 whole chicken breasts
2 pkgs. frozen pea pods
2 tbsp. chicken broth
1/4 c. soy sauce
2 tbsp. cornstarch
1/2 tsp. sugar
1/2 tsp. salt
1/4 c. salad oil
1 pkg. cashew nuts
1/2 lb. mushrooms
4 green onions
1 can bamboo shoots

Heat 1 tablespoon oil; add nuts, toast a bit and remove from pan. Add rest of oil and add the boned and skinned chicken cut in pieces. Cook quickly until meat is no longer transparent. Add mushrooms and broth, simmer a few minutes. Add soy sauce thickened with cornstarch. Add bamboo shoots and pea pods. Add green onions and nuts. Serve over rice or chow mein noodles.
