BLACK BEAN, MANGO AND AVOCADO SALSA | |
This salsa is AWESOME! 1 (15 oz.) can black beans, drained 1 (16 oz.) bag frozen mango chunks, thawed (Dole) 2 or 3 Haas avocados, diced 1 bunch cilantro 3 tbsp. chopped garlic (about 4 cloves) 1/2 small red onion, diced 1 (4 oz.) can diced jalapeno peppers Open and drain the beans, rinse well until there is no bean juice. Cut mango into 1/2-inch pieces. Cut avocados in half, cut around the edges and take skin off then dice into 3/4-inch pieces. Chop cilantro until all crushed up. Probably 4 cloves garlic, chopped fine. Open can of jalapenos. In a suitable glass bowl, mix everything all-together so it incorporates all the flavors. Cover with Saran or plastic wrap and chill in refrigerator overnight. Submitted by: DebCo |
