SCALLOPED POTATOES | |
6-8 med. potatoes 3-4 pieces thick sliced bacon, cut into small pieces and cooked; reserve bacon grease 1/2 c. chopped onions 1/2 c. chopped bell pepper 1 1/2 c. cold milk 1/2 c. cold whipping cream 1 stick butter Flour Salt and pepper Pare potatoes and slice about 1/4 inch thick. Add to boiling, salted water and cook until tender; drain. Melt butter in saucepan. Add onions and bell pepper. Cook until tender. Add bacon grease and bacon. Stir in enough flour to absorb butter and grease (use medium to high heat). Pour in milk and whipping cream. Turn heat to low. Stir constantly until mixture is smooth and thick. Add salt and pepper to taste. Cover bottom of casserole dish with layer of potatoes. Cover with sauce. Layer again with potatoes, then sauce. Continue to do this, finishing with sauce. Bake at 350 degrees for 30 minutes. |
