ZUCCHINI BLONDIES 
1 c. flour
1 tsp. baking powder
1/2 tsp. salt
1/8 tsp. baking soda
1/3 c. butter, softened
1 1/4 c. firmly packed brown sugar
2 eggs, slightly beaten
1 tsp. vanilla
1 c. shredded, unpeeled zucchini (approximately 6 oz.), squeezed dry
1/2 c. chopped walnuts
3/4 c. semi-sweet chocolate pieces

Spray 8 x 8 inch baking pan with vegetable cooking spray. Line pan bottom with wax paper. Spray paper. Sift together flour, baking powder, salt and baking soda. Beat together butter and sugar until light and fluffy. Add eggs and vanilla; beat lightly.

Stir in sifted dry ingredients. Fold in zucchini, walnuts and half of the chocolate pieces. Pour into prepared pan. Sprinkle remaining chocolate pieces on top. Bake in preheated 350 degree oven for 40 minutes or until done. Invert when cool and cut into squares.
