SMOTHERED CATFISH 
4 tbsp. shortening
4 tbsp. flour
2 lbs. catfish steaks
2 cloves garlic
1 c. chopped onions
1/2 c. chopped celery
2 tbsp. Granny's seafood seasonings
1/4 c. bell pepper, chopped
1 (16 oz.) can tomatoes
1 tbsp. lemon juice
2 tbsp. Tabasco
2 tbsp. sherry

Make a roux with shortening and flour. Add fish, herbs, seafood seasonings and pepper. Saute a few minutes. Add remaining ingredients. Simmer about 10 minutes. Let stand 10 minutes. Serve over fluffy rice.
