PERSIMMON COOKIES 
1 c. persimmon puree
1 tsp. baking soda
1 c. brown sugar
1/2 c. butter
1 egg, beaten
1 c. raisins
2 c. flour
1/2 tsp. cloves
1/2 tsp. nutmeg
1 tsp. cinnamon
1/2 tsp. salt
1 c. walnut meats

Sprinkle baking soda over persimmon puree and blend. Add sugar and butter and beat until creamy. Add egg and blend well. Sift flour with spices and salt and add to persimmon mixture. Blend until smooth. Add nuts and raisins. Drop by spoonfuls on greased sheet. Bake at 375 degrees for 12 to 15 minutes. Makes 3 dozen.

For Persimmon Squares: Pour into well oiled 8" square pan. Bake at 350 degrees for 15 to 30 minutes. Cut into squares while still warm.
