PERSIMMON COOKIES 
2 c. sifted all-purpose flour
1 tsp. double-acting baking powder
1 tsp. baking soda
1 tsp. salt
1/2 c. soft shortening
1/2 c. granulated sugar
1/2 c. brown sugar, packed
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ground cloves
1 egg, beaten
2/3 c. persimmon pulp

Start heating oven to 375 degrees. Sift flour with baking powder, baking soda and salt. Mix shortening, granulated and brown sugar, cinnamon, nutmeg, ground cloves and eggs until creamy. Blend in persimmon pulp, then flour mixture. Drop rounded teaspoonfuls of dough 2 inches apart onto ungreased cookie sheet. Bake 12 to 15 minutes or until lightly browned. Makes about 3 1/2 dozen.
