CARROT CAKE 
Cooking time: 1 hour and 10 minutes. Oven temperature: 350°F.

2 c. flour
4 eggs
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
3 jars baby food - carrots
1 c. grated carrots
1 tsp. cinnamon
1 c. oil
1 1/2 c. sugar
1 c. nuts (optional)

Mix together all of the above ingredients. Pour into a greased cake pan and bake in a preheated 350°F oven for about 1 hour and 10 minutes.

CREAM CHEESE FROSTING FOR CARROT CAKE:

2 1/2 c. confectioners' sugar
3 oz. cream cheese
1 tsp. vanilla
1 tbsp. milk, more or less as needed

Mix above ingredients until smooth and frost cooled carrot cake.
