ORANGE GLAZED SWEET POTATOES | |
2 lbs. sweet potatoes or yams 2/3 c. sugar 1 tbsp. cornstarch 1 tsp. salt 1/2 tsp. grated orange peel 1 c. orange juice 2 tbsp. butter Pare sweet potatoes, cut into lengthwise pieces. Cook in water until almost tender. Put into ungreased 1 1/2 quart casserole dish. In saucepan, stir together sugar, cornstarch, salt and orange peel. Slowly stir orange juice into sugar mixture. Add butter. Cook, stirring constantly until mixture boils. Boil and stir for 1 minute. Pour hot mixture over sweet potatoes in casserole, cover and bake 1/2 hour at 400 degrees. Serves 4 to 6. You may use the dry pack yams in place of the fresh sweet potatoes. |
