HOLIDAY RE-DO 
MENU: Turkey gumbo on rice, hard French rolls, cranberry sauce, egg-and-onion salad, fruit cake or Christmas cookies.

TURKEY GUMBO:

1/2 c. cooking oil
1 c. flour
1 qt. water
2 lg. onions, finely chopped
1 clove garlic, chopped
1 c. green onions, chopped
1/4 c. green pepper, chopped
1/4 c. parsley, chopped
1/4 c. celery, chopped
Salt and pepper
Leftover turkey
1/2 tsp. file

Make a roux with oil and flour by placing them in a flat pan and cooking at 275 degrees in the oven for about 2 hours, or until caramel color, stirring 4 times during cooking. This can be done days ahead and refrigerated.

Add all other ingredients except 1/2 cup green onions and file. Boil for about 2 hours. In the last 15 minutes, add reserved green onions. Remove from fire and add file. Serve over hot rice.
